A Pattie How-To

Step 1:

 Take a ball of dough and
roll it out on a floured board.
Use a Ginger wine bottle filled with water (for weight) and roll the dough into a thin circle. Work quickly so it doesn't get tough.



Step 2:

 Using a bowl or large glass for a template, cut a circle out and dispose of the excess dough. Remember, to be a Miss Sonia's patti, you have to be the biggest, flakiest patti in Negril.



 Step 3:

 Fill the circle with the filling of your choice (callaloo, curried lobster / chicken / beef, Italian style veggies 'n cheese) leaving about ½ inch border all the way around. Next take a brush and wet it with water and moisten the border.



Step 4:

 Fold in half, pinch the borders together with a floured fork, flour the whole pattie.



 Step 5:


Got enough ready
for those appetites?



Step 6:

 Gently drop the patties into boiling vegetable oil over a wood fire, cook until a golden color, turning once to cook the other side. Note: only wood fires are used by Miss Sonia.



Step 7:

 Sit back, relax and enjoy, but remember these babies are hot inside! So poke it with your fork first or have another Red Stripe while you let it cool for a bit.
